The Dietary Assistant is employed in institutional food service (usually health care) to help the dietary staff provide healthy, safe, and nutritious food. Duties will include interacting with clients and performing various food production and service tasks. The demand for dietetic practitioners trained in nutrition, sanitation, modified diets, accurate measurements, and tray line efficiency is increasing. An excellent job market provides an opportunity for employment and to continue academic progress toward a Dietary Manager/Dietetic Service Supervisor Certificate or an Associate Degree in Dietetic Technology. CERTIFICATE OF ACHIEVEMENT The certificate can be earned in one semester by completing the courses listed below: 1. NUTR 10 Basic Nutrition with a "C" or better, 4 units NUTR 200A - Self-paced computer-assisted instruction; hours are flexible. Overview of sanitation, food production, and modified diets, 1 unit 3. NUTR 246 Occupational Work Experience in Nutrition & Dietetics, 1-4 units Minimum of 60 hours of guided training providing a variety of dietary experiences.
